The Original Siren of Sherwood came up with another of her
tasty summer salads, thank you mon ami, we are blessed to
have one such as you among us.
One-third cup olive oil
Juice from 1 lemon
One-half teaspoon kosher salt
One-half teaspoon ground black pepper
1 cup fresh basil, chopped
2 pounds zucchini, shaved in ribbons
1-pint cherry tomatoes, cut in half
1 ounce fresh Parmesan, shaved in ribbons
Combine first 5 ingredients in a large bowl, mix well, and
then add rest of ingredients. Place in fridge for 3-4 hours,
and then stir well. Serves 8-10.
