Magnificent Mahi Mahi
Melissa, our beekeeper from the Greek Isles, has returned
to us this spring. Her mama, the Greek muse Terpsichore, once
again schlepped her daughter and dropped her off at our door,
asked for those magnificent shopping coupons we give our guests,
and went to do some shopping in Douglas and Saugatuck. M brought
some fresh Mahi Mahi and proceeded to BBQ us a delicious,
ambrosial, and enticing dish. During her prep work (her hostile
takeover of our kitchen), she pulled out a small packet of
spices to rub on the fish. She said it was super secret and
her mother the muse would be furious if she shared it, so
she did. M made us the most delicious lunch, of which the
rub for the Mahi Mahi follows:
Ingredients:
2 lbs mahi-mahi or pacific halibut cut into 4 portions
4 teaspoons chili powder
2 tablespoons fresh-squeezed limejuice
2 tablespoons extra virgin olive oil
1-teaspoon ground cumin
1-teaspoon onion powder
1-teaspoon garlic powder
1-teaspoon salt
one-half teaspoon fresh ground pepper
Instructions:
Combine all ingredients in a small bowl and rub generously
on fish filets. Grill to perfection. Enjoy as fish tacos....
