Teresa's and Nita's Cilantro-Ginger Rice
From the Siren's who should be doing stand up comedy,
hmmmm, maybe they are doing comedy but at the friendship level,
they revel in spreading happiness and good humor in their
wake. The twins leave a smile upon your face and maybe a smirk
too. We had the pleasure of sampling this delicious dish one
day as we walked past their humble adobe as they were harvesting
the spring Cilantro crop, thanks for the friendship and the
side dish.
Ingredients:
1-cup white or brown rice
2 1-inch long pieces fresh ginger, peeled and cut into quarter-inch
rounds
1 teaspoon peeled, minced fresh ginger
1-cup low-salt chicken broth
two-thirds cup water
1 cup chopped fresh cilantro
1 green onion, thinly sliced
3 tablespoons vegetable oil
1 tablespoon Asian sesame oil
1 teaspoon (or more to taste) unseasoned rice vinegar
Instructions:
Combine rice and ginger rounds in large saucepan; add
broth and water. Bring to a boil, stirring often. Cover, reduce
heat to low and simmer about 20 minutes, until liquid is absorbed.
Combine rest of ingredients in mini food processor or
blender and process until almost smooth. Season with salt
and pepper if desired. Transfer rice to bowl and remove ginger
rounds. Mix in cilantro oil.
Serves 4.
