the Guru's Gluten-free Zucchini, Rice, & Feta Egg Bake
Keith, the Guru of Sherwood Forest, has recently discovered
that he is allergic to gluten (his initial reaction was: YIKES,
there is so much pasta left to be eaten--he did mention beer
in there somewhere, too). After barricading himself in the
kitchen when all of the Sirens of Sherwood were out at the
Red Dock for the day and after much rattle, clatter, and crashes
(there is a reason we don't allow Keith in the kitchen), he
came up with (much to the surprise of the Sirens) a delightful
recipe everyone is sure to enjoy.
Ingredients
10 eggs, beaten
1 and one half Cups milk
One half-teaspoon salt
One half-teaspoon black pepper
1 teaspoon garlic powder
1 cup shredded mozzarella cheese
2 cups shredded zucchini
1 small onion
2 cups brown rice (cooked according to instructions)
3 ounces traditional feta, diced
Preparation
Combine first 6 ingredients in large bowl. Sautee onions
8 minutes or until soft, then add zucchini and cook 2 more
minutes (set aside and let cool). Add rice and zucchini/onion
to egg mixture-stir. Pour mix into 2 greased round 10-inch
ceramic pie dishes, sprinkle feta on top, then bake at 350
degrees for 45 minutes or until lightly brown. Remove from
oven; let cool 5 minutes, and then slice. Serves 10-12.
