Black Eyed Pea and Cilantro Salad
Melissa is a bee keeper from the Greek Isles, rumor has it
she is descended from the Greek Muse Terpsichore, we are almost
sure about this because of the beautiful music she plays on
the lyre and the birds that seem to come from miles around
and sing beautiful notes which resonate ones soul in such
a captivating manner.
Ingredients
One-half teaspoon salt
2 cloves garlic, minced
one-third cup rice wine vinegar
3 tablespoons olive oil
1-teaspoon ground cumin
1 can (14.5 oz.) diced tomatoes, drained
one-half large sweet onion, chopped
one-half cup fresh cilantro, chopped
1 can (15 oz.) black eyed peas, rinsed & drained
1 jalapeno pepper, seeded and minced
Preparation:
Combine salt and garlic in a medium bowl; mash with a fork
until a paste forms. Add vinegar, oil, and cumin, stirring
with a whisk. Add tomato and next 4 ingredients (through pepper)
and toss well. Serve with tortilla chips or as a side salad
(serves 4-6).
