Tofu Broccoli Soup
is a creation from the head siren, Sue, and as the main
assistant, Keith can vouch that it's not only delicious
but also healthy.
Sue's Tofu Broccoli Soup
cups chopped fresh broccoli
1/4 cup chopped onion
2 cups vegetable or chicken broth
8 ounces silken tofu
1 cup milk
1 tablespoon fresh lemon juice
2 teaspoons butter
1/2 teaspoon salt
1/8 teaspoon black pepper
first 3 ingredients in large saucepan and bring to a boil.
Cover, reduce heat, and simmer for 10 minutes. Place tofu
and milk in blender and blend until smooth and place in
large bowl, then put 1/2 of broccoli mixture in blender
until smooth. Pour that into the bowl with milk/tofu and repeat
blending remaining broccoli mixture. Place entire pureed
mixture into a pot and cook over medium heat 3 minutes
or longer until mixture begins to thicken, stirring frequently.
Add salt, pepper, lemon juice, and butter, stirring until
butter melts. Serves 6.
