Marsha's Cocoa
Cake
Marsha
is one of the original Sirens of Sherwood and is also one
of our innkeepers who minds the store while we are away gallivanting
around the planet. This is a one of her favorite breakfast
cakes.
Marsha's Cocoa Cake
2 Cups flour
3/4 Cup unsweetened cocoa powder
1 tp. baking soda
1/2 tp. salt
1 1/2 sticks (3/4 Cup) butter, softened
1 3/4 Cups light brown sugar
2 eggs
1 tp. vanilla
1 1/3 Cups water
Confectioners sugar for dusting
Whisk together flour, cocoa, baking soda, and salt. Beat together butter and
brown sugar, then add eggs, then beat in vanilla. Add flour mixture and water
alternately until combined. Pour into greased 9x2 inch round cake pan and bake
at 350 degrees for 55 minutes. Test for doneness, then cool in pan 1 hour.
Dust with confectioners sugar.
