Sue's Springtime
Cream of Spinach Soup
This
is a nice light soup for the springtime. We call it Sue's
Springtime Cream of Spinach Soup and it's delicious.
Cream
of Spinach Soup
1
large onion, chopped
2 medium potatoes, peeled and chopped
3 Cups water
2 teaspoons salt
14-ounces fresh spinach, cleaned and stemmed
4 medium cloves garlic, peeled only
2 Tablespoons butter
3 Tablespoons flour
1 1/2 Cups hot milk
white pepper and nutmeg, to taste
Assemblage
1. Boil onion, potatoes, water, and salt in a large saucepan, then cover and
simmer until potatoes are tender. Remove from heat and add spinach and
garlic cloves and set aside.
2. Melt butter over low heat in small saucepan and whisk in flour. Keep whisking
over low heat 5 min., then drizzle in the milk and continue to whisk until
smooth (5-8 min.).
3. Puree vegetables in their cooking water and return to saucepan. Stir in
the white sauce and add white pepper to taste. Serve hot topped with a sprinkle
of nutmeg. Serves 6
