Kate & Ray's
Asparagus and Cheese Strata
This dish is easy to make-ahead,
and it's delicious! We call it Kate & Ray's Asparagus & Cheese
Strata, Ray is a hip little two year old who loves to help
his mom-Kate around the kitchen, this is one of his favorite's.
(serves 8-10)
1 loaf French or Italian bread,
cut into 1" cubes
1/2 medium onion, chopped
3/4 pound asparagus, cut into 1" pieces
6 slices Canadian bacon (optional)
8 oz. Swiss cheese, grated
4 oz. fresh Parmesan cheese, grated
6 eggs
3 Cups milk
2 Tb. Dijon mustard
salt/pepper to taste
Layer 1/2 loaf of cubed bread in greased 9x13 pan. Sautee onion in 1 Tb.
oil for 5 minutes, stirring often, then add asparagus to pan and cook 2 more
minutes (just till tender). Layer half of asparagus/onion and bacon on cubed
bread, and top with half of cheeses, then layer rest of bread on top, and put
remaining asparagus, bacon, and cheeses on top. Whisk together remaining ingredients.
Pour egg mix over all and cover and refrigerate overnight. In morning, bake
at 325 degrees for 50 minutes (till lightly browned). Cool slightly and cut
into squares.
