Artichoke and
Ham Strata
This
is a new recipe from a secret Siren of Sherwood, whose
identity we vowed to keep a secret and we tried it recently
at Sherwood Forest, and it was a big hit-hope you like
it, too!
Ingredients
3 English muffins, split & quartered
1 tablespoon butter, melted
1 Cup chopped ham (approx. 4 oz.)
1/2 Cup grated fresh Parmesan cheese
2 tablespoons chopped fresh chives
1 14-oz. can artichoke hearts, drained & chopped
2 cloves garlic, minced
1 12-oz. can evaporated milk
5 eggs
Assemblage
Arrange muffin pieces, crust side down, in greased 8-inch square baking dish;
drizzle with butter. Arrange ham & next 4 ingredients over muffins. Combine
milk & eggs and pour over muffin mixture. Cover; refrigerate 8 hours
or overnight. Bake uncovered strata at 375degrees for 50 minutes or until
set. Serves 6.
