Gabriela's Grapefruit Salad
Gabriela, a siren form Israel, grew up on a Kibbutz. Where they grew grapefruit that had their origins from the days of Adam and Eve, they are so delicious. When she visited with us this spring she brought us some and they were so mouth watering and incredibly sweet, we created a salad and immortalized her. Enjoy!
1 small red grapefruit
3 tablespoons extra-virgin olive oil
One-quarter teaspoon salt
One-quarter teaspoon black pepper
4 cups lettuce, torn or cut into small pieces
One-quarter cup crumbled feta cheese
One-quarter cup toasted walnuts
- Peel and section grapefruit over a bowl; squeeze membranes to extract juice. Set sections aside; reserve 3 tablespoons juice. Discard membranes.
- Combine juice, olive oil, sugar, salt, and pepper, stirring with a whisk. Divide lettuce evenly among 4 plates; sprinkle feta cheese and toasted walnuts over each salad. Divide grapefruit sections evenly among salads and drizzle with oil mixture.
