Keith, the Guru of Sherwood Forest, Broccoli-Carrot Fritters (gluten free)
While doing yoga high atop the levitation platform, deep in the woods surrounding Sherwood Forest, mellowed in a meditation, a food-combining mantra was morphing deep within his cerebral cortex. A blend of flavors naturally came together to create a delicious recipe that young and old can enjoy. The Sirens of Sherwood once again were surprised.
2 cups broccoli florets, chopped
1 cup grated carrots
one-half cup brown rice flour
one-half cup grated Parmesan cheese
one-half tp. salt
one half tp. ground black pepper
2 green onions, thinly sliced
1 large egg, beaten
2 Tb. olive oil
Place broccoli and carrots in microwave safe dish and microwave with a small amount of water on high 2 minutes (or until broccoli softens), then let cool and pat dry on paper towels.
Place broccoli mixture and flour in a large bowl; stir to coat. Add rest of ingredients and stir to combine.
Heat large nonstick skillet over med-high heat and add oil to coat. Scoop ¼ cup broccoli mixture and place in pan—flatten slightly. Repeat procedure to form 8 fritters.
Cook 4 minutes on each side or until golden brown (option: serve with sour cream or plain yogurt on the side).
