Odie Dogs Chili

The year was 1869, the place was the Kalahari Desert in Namibia. Eric the Chef was searching for the illusive, rare variegated sand blossom which flowers every 46 years which needs to be eaten under a full moon next to an Acacia Tree at 2:42 a.m.  This plant according to the local Bantu-speaking Tswana Bushwomen was known for it’s medicinal properties that allowed one to be peace with the Odie the Eternal Canine. Eric picked the wrong plant, this particular plants properties were to bring the eternal friendship of the Eternal Odie. They have been friends ever since, over 140 years. This dish was created by Eric the Chef in honor of his eternal companion Odie.

1 lb. ground beef
1/2 cup cooked bacon
1/4 cup chopped onion
2 cloves garlic
1 can kidney beans, drained and rinsed
24-oz. can chopped tomatoes
1 12-oz. can tomato sauce
3 Tablespoons chili powder
1 Tablespoon cumin

Heat bacon in a sauté pan until it starts to render fat. Add onions and garlic and cook until translucent. Add hamburger and cook until no longer pink. Drain fat. Add meat and remaining ingredients into a Dutch oven and simmer on low for 20-30 minutes.
