Mama-San’s Lemon Squares
Mama San Carol has been feeding the masses of her family for generations, mistress of the eternal happiness among her children and grandchildren for the savory recipes she has served up over the decades. We snuck into her secret recipe file the other day, and cooked up a batch of these babies, left them on her counter (after we ate a few) and left a note from her secret admirers.
Crust:
One-half cup butter
One-cup flour
One-quarter cup powdered sugar

Filling:
Two eggs
One-cup sugar
One-quarter teaspoon salt
The juice from one medium-sized lemon
One half-teaspoon baking powder
Two tablespoons flour
Assemblage:
Cream the first three ingredients, press into a 9 x 9 ungreased pan and bake at 350 for 15 minutes.
Mix the rest of the ingredients and pour onto crust, bake at 350 for 20-30 minutes or until it starts to brown. Sprinkle with powdered sugar.
