the Morning Doves Baked Oatmeal
Kathleen is a Morning Dove who is descended from the mysterious
Spirit of the Cloud tribe that inhabits a remote part of the
southwest. There are six daughters who travel the continent
and look for signs, marks, they experience that which mankind
no longer appreciates or had taken for granted. They place
omens creating hallowed ground for future generations who
will gain sight on what really matters the most, a clean food
chain, fresh air to breathe and water to drink. She stopped
by the bed and breakfast on her journey north. Quietly sipping
some fresh sassafras tea, she wove tails that have been in
her lineage for generations and then shared with us a delicious
recipe her mother had created. It's so mysteriously pleasant.
Ingredients:
One-half cup canola oil
One-half cup sugar
2 eggs
3 cups oatmeal
1.5 teaspoons baking powder
1-teaspoon salt
1-cup milk
1-tablespoon butter
1 medium size banana
1 half-cup raisin's
1 medium apple
1 medium peach
Optional: granola or sliced almonds
Heat oven to 350 degrees, in a medium bowl, combine 1/2 C
oil, 1/2 C (or less) raw sugar and 2 slightly beaten eggs.
In a medium bowl, combine 3 C oatmeal, 1-1/2 t baking powder,
1 t salt and 1 C milk. Combine wet and dry ingredients.
Melt 1 Tb. butter in a 9 x 9 or similar pan (to save energy
and a pot, melt the butter in the baking pan in the pre-heated
oven.
Add a layer of sliced bananas, raisins, sliced apples, sliced
peaches to the bottom of the pan, atop the butter.
Pour oatmeal mixture atop fruit.
Optional: sprinkle granola or sliced almonds on top of the
oatmeal mixture.
Bake for 35-40 minutes or until lightly brown on edges
