Felix's Watermelon Salad

Felix says he used to be a cat that lived near a tribe of Trees ( The Oakster Tribe) that had the ability to walk, talk and sleep (gotta love that). One day while wandering aimlessly, Felix came upon the Oaksters who were picknicing in a beautiful field of wild watermelons. They were quite surprised by the intrusion and subsequently picked him up (and a few watermelons too) and threw them into a nearby fired of wild red onions. Felix dug deep into his magic food bag and not kidding here - made a delicious summer watermelon salad- sharing we are.

Watermelon Salad
2 Tb. balsamic vinegar
2 tp. olive oil
1 Tb. sugar
¼ tp. black pepper
5 cups watermelon, cut into large chunks
1 cup vertically sliced red onion
½ cup chopped fresh mint

Whisk together first 4 ingredients; add rest of ingredients, stir and refrigerate at least 1 hour or up to 8 hours. Serves 4-6.
