Sue's Marvelous Mocha Chocolate-Chip Muffins
Floating above the ground (in the side yard) the other morning
was a guest who said he was from the ninth century (no, we
usually don't believe humans when they inform us of being
from another time dimension, but occasionally, yes, it does
happen). His said in a really calm soothing voice that his
name was Akbar and he was a Sufi Mystic. In his hand was a
small mocha/espresso and the smell was so enticing, inviting
and welcoming, Sue said a cup magically appeared in her hand.
Loving coffee the way she does, and having received a small
amount of the marvelous mocha powder from said Sufi Akbar,
decided to share with our other revelers in the form of the
delicious muffins, Sue added chocolate chips and believe me,
They ROCKED!
INGREDIENTS
1 3/4 cups all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3/4-cup semi-sweet chocolate chips, and more for sprinkling
on top
3 Tbsp. cocoa powder
3/4-cup sugar
3/4-cup milk
1/3-cup strong coffee, room temperature
1/3-cup vegetable oil
1 egg
1 tsp vanilla extract
Mix dry ingredients in a bowl. Mix wet ingredients in a separate
bowl and add the wet ingredients to the dry. Stir ONLY till
moistened. Grease muffin tin and fill with batter, then sprinkle
some of the remaining chocolate chips on top of each muffin.
Bake at 400 degrees for 18 minutes. Makes 12 muffins.
